Preheat oven to 400 degrees F.
Cut the top off the garlic bulb, exposing the cloves. Place the garlic bulb on a piece of aluminum foil and drizzle with olive oil. Wrap the garlic in the foil and place on a baking sheet. Roast for 40 minutes, or until the garlic is golden brown and soft. Remove from oven and let cool.
When the garlic is cool enough to handle, squeeze the garlic cloves out of the paper skin into a small bowl. Mash the garlic cloves with a fork until smooth.
